Fancy Boneless Chicken Breast Recipes
Everybody needs some boneless chicken breast recipes that can be served for a nice dinner. This has a great blend of spices and uses spinach and mushrooms to make it a complete meal.
This boneless chicken breast recipe I found online when my boss wanted to come over for dinner. At the time I had no idea why he wanted to come but I knew I wanted to impress him so I made this recipe. Him and his wife just loved it, she even asked for the recipe just before they left.
Spinach Chicken Breast
4 Boneless chicken breast, washed
1 egg
1 Tbsp Water
½ c flour
Salt and pepper to taste
3 Tbsp Parmesan Cheese, grated
1/3 c bread crumbs
6 Tbsp butter, divided
1 Tbsp lemon juice
1 16 oz bag of frozen or fresh spinach, cooked and drained
8 oz mushrooms, sliced
In a shallow bowl lightly beat the egg with the water. Then in another bowl mix the flour, salt and pepper. In one more bowl combine the Parmesan cheese and bread crumbs.
First dredge the chicken through the flour. Next dip it in the egg mixture; then last but not least coat the chicken with the cheese-crumb mix. After you do this to all four chicken breast place on platter cover and refrigerate for about an hour.
Melt 4 of the 6 tablespoons of butter in a large skillet over medium heat. Then add the chicken and brown it on both sides. Cover, reduce heat and let the chicken continue to cook until tender, around 20-25 minutes. Don’t forget to flip the chicken once in a while.
In a bowl toss the spinach with the lemon juice and a pinch of salt and pepper. Place the spinach, which should still be warm, on a platter and arrange the chicken breast over the spinach. Keep the platter in a warm area while you finish the last step.
Melt the remaining 2 tablespoons of butter in the skillet and add the mushrooms. Sauté until they are tender, then spoon them over the chicken and serve.
This boneless chicken breast recipe can also be served on individual plates if you want to skip the platter.
