Boneless Chicken Breast Recipes with Pineapple

I love chicken and I think chicken goes fabulous with pineapple.  That’s why I want to share these two fantastic chicken breast recipes with you.

This first recipe is pretty basic and most people should be able to complete it without much time involved.  It can also be done in the crock pot or use frozen chicken.

Chicken Pineapple over Rice

6 boneless chicken breast
3 cans of cream of chicken soup
3/4 c of sour cream
1/2 can of pineapple (You can use fresh if you like)
6 c Rice

In a mixing bowl combine the soup, sour cream, and pineapple.  If you use canned pineapple you can add some of the liquid for more flavor.  Then lay the chicken in a 9×13 cake pan and pour the soup mix over.  Cover with foil and bake at 350 for 45 minutes, you can reduce the heat to 250 and cook for 2 hours for more tender chicken.  Prepare the rice on the stovetop as directed.  When done serve the chicken over the rice with plenty of the gravy.

This next boneless chicken breast recipe using a few more ingredients but if you prefer potatoes to rice then this goes excellent with some potatoes.  However it still goes wonderfully well with wild rice.

Pineapple baked chicken
4 boneless chicken breast
Salt and pepper
1 tsp rosemary, dried and crushed
8-10 green onions, sliced thinly
2 tsp candied ginger, finely chopped
1 cup pineapple juice
4 pineapple slices, halved

Mix the rosemary with salt and pepper, to create a rub.  Then rub it on the chicken to create an even coat.  After coating place the chicken in a baking pan and cover with the onions.  In a separate bowl mix the juice and ginger and pour this over the chicken.  Bake at 375 for 45 minutes, until chicken is done.  To serve place on dish with chicken slices to garnish.
