Boneless Skinless Breast: Chicken Recipe

I love Mexican food and I want to share this favorite chicken breast chicken recipe with you.

I got this recipe from a co worker a long time ago.  It has become one of my favorite Sunday lunch or dinner recipes because there is a bit of prep to do and I can get the whole family in the kitchen helping me, which is a double bonus, I get help and the family is spending quality time together.

Just the breast chicken recipe for Fajitas
3-4 Chicken breast, cut into ½x2 inch strips
2T vegetable oil
2 green bell peppers, seeded and sliced into thin strips
1 pepper, seeded and sliced thin
2 yellow onions, sliced into thin rings
1 tsp pepper
½ tsp salt
1 tsp cumin
¼ c salsa
Flour tortillas

Toppings
Tomatoes
Salsa
Cheese
Sour Cream
Guacamole

In a large skillet saute the onions and peppers with the oil over medium heat.  If you would like a more heat to your fajita then you can also add a finely chopped jalapeno pepper with here.  Once the onions are translucent raise the temperature to high and add the chicken.  After 5-10 minutes the chicken should be done.  Then add the salt, pepper, cumin, salsa and stir.  Turn heat to low and let simmer for 5 minutes.

While that is simmering warm up the tortillas.  My favorite way to do this is to wrap them in foil and heat in the oven at 350 for about 10 minutes turning after 5.  Although for ease you can warm them in the microwave, about 40 sec for 4.

To serve place about ¼ of the chicken mixture in the center of the tortilla, top as desired.  Then fold edges and roll like a burrito.

If you would like to serve this a bit fancy then you can roll the tortilla with just the chicken mixture, place on a plate, then sprinkle lettuce and cheese over the tortilla and add a dap of sour cream and guacamole.  Then serve with rice and refried beans.
