Chicken and Rice recipe

I believe the cheapest thing you can cook is a chicken and rice recipe.  The reason for this is that chicken is the cheapest meat you can purchase and rice is amazingly cheap.  I can feed 4 people a chicken and rice recipe for under 5 bucks, depending on local grocery prices.

This first chicken and rice recipe is very simple to make and I can have it done it less then an hour.

Creamy Chicken and Rice
3 chicken breasts
1 can cream of celery soup
1 can cream of chicken soup
1 can cream of mushroom soup
1 c rice
¼ c butter diced

Preheat the oven to 350.

In a large mixing bowl combine the rice, soups and butter.  Pour the mixture into a casserole dish or a 9×13 cake pan.  Place the chicken on top and season with salt and pepper.  If I have the time I will normally cube the chicken and spread it over the top, that way it will feed four easily.

Bake for 35-40 minutes.

This second chicken and rice recipe I want to share is a chicken stir fry.  It does take a bit more effort then the previous recipe but I love Chinese food and this stir-fry is delicious.

Chicken Fried Rice
1 chicken breast, cooked and cubed
1½ Tbsp teriyaki sauce
¼ c chicken broth
1 tsp fresh ginger root, grated
¼ tsp white pepper
2 tsp vegetable oil
2 eggs, lightly beaten
½ c onion, diced
½ c carrot, shredded
1½ c rice, cooked
½ c frozen peas

Combine the chicken, teriyaki sauce, broth, ginger and pepper in a small bowl and set aside.

In a large skillet heat 1 Tbsp oil and add the eggs.  Cook over medium heat stirring often until set but still moist.  Pull out of pan and set aside.

In the same skillet and remaining oil and heat over medium heat.  Once warm add the onion and carrot and fry until tender, usually 3 minutes.

Add the rice and peas and continue cooking until rice starts browning.  Then add the chicken mix and egg and cook for a few more minutes until fully heated.

Serves 4 as a side dish or 2 as a main course.
