Another easy chicken breast recipe
Well being a mother I don’t have a lot of time on my hands to do a large meal and I am sure most of you are like me. Between cleaning house, doing laundry, playing with the kids, helping with homework, making sure your teenagers DO their homework, and the other long list of motherly duties cooking doesn’t sit high the the podium of importance so it lacks the time needed to prepare gourmet meals. So I have spent time searching over the internet and trying to get recipes that require little prep time, (some require more for when my hubby has a day off) so that I can still provide good cooking to my family. I am concetrating solely on chicken breast recipes since in this hard economic time I need meals that are also cheap and frankly chicken is the cheapest meat you can get. Last night was one of those nights that I didn’t have a lot of time to prepare much food so I made a very simple and easy chicken dinner that was low on cost but high in value and nutrition.
I took enough chicken for my family threw it in a pan then covered it in Season-All. Turned the oven to 350 and throught the pan in. Then I pulled out some potatoes, washed them and then wrapped them in fail and threw them in as well. If I had more time I would have poked the potatoes and put butter on them. Then I let them cook for 45 minutes put a pan on the oven and heated a can of green beans, and voila. I had a wonderful dinner prepared in less then an hour with only around 10 minutes of my time spent to make it.
Now for the cost of this wonderful dinner was cheap. For this chicken breast recipe I used four boneless breast, which cost me about 2.5, plus 4 potatoes which cost about 1.2 and two cans of green beans which cost .60. For a grand total of 4.3 or just over a dollar per person, not bad.
