Chicken Casserole Recipes
Chicken casserole recipes are a treasure to have for any busy mother to have. The chicken casserole can be made before hand so it is ready to pop in the oven, plus it bakes in the oven and takes needs no attention while cooking.
There are a lot of different chicken casserole recipes that you can find but I want to share two different types of casseroles with you here.
Doritos’s Casserole
1 lb boneless skinless chicken breast cooked and cubed
1 bag of Doritos’s, crushed
1 family size can cream of chicken soup
1 onion, chopped
1 can Rotel tomatoes
2 cups shredded cheese, Monterey or a Mexican/Taco blend will work great
Preheat the oven to 350
Place half the Doritos on the bottom of a square pan. Then top it with half the chicken.
In a small bowl combine the soup, onion and tomatoes and mix well. Put half the mixture on top of the chicken.
Add a handful or two of the chips, then the rest of the chicken and finally the last of the soup mixture. Then top it with the rest of the chips and the cheese.
Bake in oven for 25 minutes, just until the cheese melts.
This next chicken casserole recipes is very similar to the one above but it uses a can of mushroom soup and includes olives. These two factors make this casserole taste quiet a bit different and my family enjoys both of them.
Mexican Chicken Casserole
1 lb of boneless skinless chicken breasts,
½-1 bag of diorite’s depend on how much you want
1 can rotel tomatoes
1 can cream of chicken soup
1 can cream of mushroom soup
1 can olives, sliced
½ block Velveeta cheese
2 cups shredded cheese
Cut fat off chicken and place in pot of boiling water until it’s white and tender.
While chicken cooks mix together the tomatoes, soups and olives in a bowl
Spray a large casserole dish with non-stick cooking spray.
Once chicken is done, cool and shred into the bottom of the sprayed casserole dish. Top the chicken with your soup mix and spread evenly.
Slice the Velveeta thinly and top the soup with it. Crush the chips over the Velveeta and then finish the casserole by sprinkle the shredded cheese on top.
Bake at 350 for 25 minutes.
