Chicken Pot Pie Recipe

A home made chicken pot pie recipe is what every child remembers about grandma and then mom teaching them how to make.  My mom wasn’t much of a cook but my grandma taught me how to make this chicken pot pie recipe when I was a teenager. 

This chicken pot pie recipe may not be as completely from scratch as some others, but it replaces a few things for ease to make it a little simpler for us busy mothers of the 21st century.

Chicken Pot Pie
Filling:
1 lb chicken breasts, cubed
1/3 c oil (extra virgin for best flavor)
¼ tsp onion salt
¼ tsp pepper
1 tsp garlic, minced

1 can chicken broth (about 11-14 oz)
1 c carrots, sliced or cubed
½ c celery, sliced
½ c onion, chopped
1 c green peas (frozen or fresh)
1 can cream of chicken soup
½ tsp celery seed
1/8 tsp salt
1/8 tsp pepper
1/8 tsp garlic powder

Crust:
1 c Flour
2 tsp baking powder
1/3 c milk
2 Tbsp butter, softened
1/8 tsp salt
½ tsp ground sage

In a medium skillet add the oil, garlic, onion salt, pepper and chicken.  Cook on medium until chicken is done.  Drain the chicken and leave in strainer for later.

While chicken is cooking combine all the ingredients for the crust in a medium-large bowl.  Mix until completely combined and form into a ball.  Then roll to about 10×10

In the same skillet as you did the chicken  put the carrots, celery and onion and enough broth to just cover the vegetables.  Keep the leftover broth for later.  Bring this to boil , then reduce it to a simmer and cook for 10-15 minutes.

Once the vegetables are done put them in the same bowl used to prepare the crust.  Then add the chicken, peas, soup,  celery seed, salt, pepper and garlic and mix until well blended.  Then gradually add a little chicken broth until desire consistency is obtained.

Lightly grease a 9×9 baking pan.  Place the chicken and veggie mix in the pan and top it with the crust.  Brush the top of the crust with a little egg white or butter to make it shine.

Bake at 350 for 30-35 minutes; the crust should be golden brown and the filling should bubble.
