Crockpot Chicken Breast Recipes: Part 1

I love my crockpot and think that is a fantastic kitchen gadget.  In fact, without it I think my family would starve once or twice a week.  The great thing about the crockpot is you can get it going and then forget about it, which is perfect in the gogogo lifestyle we live in.  So for the next week or so my family will be testing a few different crockpot recipes and I will post the best ones here.

Crockpot Chicken Breast Recipes were fairly easy to come by I realized while doing a search.  So I searched through 100’s of recipes and choose a few that I felt sounded the best and had a good ingredient list to back up the title.  This first one is a favorite of mine because not only does it use an inexpensive meat (chicken), but also a very inexpensive and filling carbohydrate (rice.)

Chicken and Rice Casserole

4 chicken breasts
3 cans of any cream soup (we did chicken)
1 c Minute Rice
1 large onion, chopped
1 bay leaf
2 stalks celery, diced
3 cloves garlic, minced
1/2 tsp Bell’s Poultry seasoning

Dump the soup and rice in the bottom of the crockpot with the rice.  Then add everything else except the chicken and stir until evenly blended.
Next add the chicken pushing it down below the soup, it is very important that all the chicken is covered by soup otherwise the exposed portion will come out dry.  Cook this on Medium for 4-5 hours.

This next crockpot chicken breast recipe seemed a little too simple but I still thought I’d give it a try and my family devoured it.  I realized this recipe will be perfect when I don’t have much time for meal prep.

Mushroom-Onion Chicken

4 boneless chicken breasts
1 can cream of celery soup
1 c of mushroom, cubed
1 packet onion soup mix

Just throw everything in the crockpot together, stir and let cook on medium for about 6 hours.
