Crock pot Chicken Breast Recipes: Part 2

Do you need more then 2 crock pot chicken recipes?  My family certainly does, so here are a few more of the recipes we have tried out.

I wasn’t even going to look at this crock pot chicken breast recipe at first, but then remembering my husbands love for BBQ chicken (and the fact that we only eat it once a month or so) I choose to look at it.  Seeing the unique ingredients I thought I’d give it a try and must say I was pleasantly surprised.

BBQ Chicken

1 lg. chicken, whole or cut in pieces
18oz bottle of BBQ sauce, you can make your own if you prefer
1 lemon, sliced
1 onion, with the skin off and sliced
1 can of coke

Put the chicken in the crock pot, then pour the BBQ sauce over it.  Then layer the onion and lemon on top; pour the coke in the crock pot. Set on low and cook overnight.  By the next evening you will have incredibly tender chicken.  In fact it falls apart when you try to pull it out so you may want to consider making a foil base and handles for easier removal.

This next crock pot chicken breast recipe was really good.  We served it while my mother was over and she couldn’t believe it took so little effort to create.  I think the hardest part was slicing the mushrooms and I could have bought presliced it I didn’t have time.

Mushroom Chicken
6 to 8 pieces boned, skinless chicken
Garlic Powder to taste
Onion, cut in eighths
1 can of mushroom soup
½ sautéed mushrooms (about 1½ c fresh mushrooms, sliced)

Sprinkle the bottom of the crock pot with garlic powder.  Place chicken in crock pot and sprinkle with more garlic powder.  Then add the onion, cover and cook on low for 8 hours.
About an hour before serving add can of mushroom soup and mushrooms. Works well over rice or egg noodles.
