Easy Chicken breast recipes with salad

Chicken is one of the healthiest meats that you can eat but you can’t live off of chicken breast alone.  You need vegetables, fruits, and carbs and I have some really easy recipes to add your chicken to some of these and have a really quick healthy dinner.

The easiest of all the chiken breast salads is the simple grilled chicken salad;

1lb chicken

Cut lettuce

Salad toppings of your choice

Salad dressing of your choice

You want to grill the chicken, I usually just throw it in a pan and fry it, which is about the same, but you can also go and do it out on the grill if you have one.  While the chicken is cooking I will wash the lettuce and cut it up.  Then I get out everything else and start chopping my toppings.  I like to use olives, carrots, and tomatoes.  I lay my lettuce on a plate then arrange the toppings how I like them.  Once the chicken is done I cut it in strips and then put it on top of the salad, use some of my dressing and in less then 30 minutes I have prepared a healthy and filling dinner for family.

Another good salad with chicken is a ceaser salad;

1lb of cooked, cubed chicken

1 head of lettuce cleaned and cut in bite-size pieces

1/4 c shredded carrots

1/4 c chopped olives

1 c cheese (parmesan is the original ceasar cheese, but I have used cheddar just fine)

Garlic powder to taste, usually just a few sprinkles works for me

1 c Ceasar dressing (can use more or less to taste)

Add your chicken, Lettuce, carrots, olives, cheese, and garlic powder in large bowl and toss.  Then you can add the salad dressing to the bowl and toss some more or you can serve it without the dressing and let everyone add there dressing themselves.
