Needing Easy Chicken Recipes for Two?
Recently married? Or maybe the kids have all left the roost? Well either way you are now in search of some easy chicken recipes for two, now that it’s just hubby and you.
Look I’ve been there done that and know how hard it can be to take a recipe meant for 4 and try to cut it down to 2. I mean have you ever actually tried to use just half an egg, or thought about what to do with that other half a can of chicken soup you didn’t need? I usually ended up just cooking too much and then either using it for lunches or wasting it, but I did find some great easy chicken recipes for two people.
The first simple chicken recipe is a quick apricot chicken that works great for any night and can be made in a jiffy.
Apricot Chicken
2 skinless boneless chicken breast
¼ c mayonnaise
¼ c apricot preserves
2 Tbsp dried minced onion
Place the chicken in a 9 in baking dish that has been sprayed or greased. In a mixing bowl combine the mayonnaise, preserves and onion. Then spoon the apricot mix over the chicken.
Bake at 350 for 25 minutes or until the chicken is done, the juices should be clear.

Avocado Chicken
2 skinless boneless chicken breast, ¼” thick
3 Tbs cornmeal
1 Tbs cornstarch
½ tsp cumin, ground
½ tsp garlic salt
1 egg, beaten
1 Tbs water
4 tsp Olive oil
½ c Monterey Jack Cheese, shredded
6 any-size, slices of avocado
2 Tbs sliced green onion
Sour cream
In a plastic bag combine the cornmeal, cornstarch, cumin and garlic salt. In a bowl beat the egg with the water. Dip the chicken in the egg and then shake it in the bag until coated.
Heat the oil in a large skillet. Cook the chicken for 8 minutes flipping half way through. Top with the cheese and then avocado. Cover the pan and cook until chicken juices run clear and the cheese is done. Garnish with a dap of sour cream and onion.
