Healthy Chicken Breast Recipe

I was in the mood to get my family eating a little bit healthier so I did a search and came across this little jewel.  I love this healthy chicken breast recipe, especially because it utilizes rice, which I have a hard time finding a place for in my recipes.

This recipe is meant to serve two but you can easily adjust it to meet your needs.

2 chicken breast, cooked, cut into strips
1 large green pepper, cut into strips
1 cucumber, sliced
12 mushrooms, sliced
2 Tbsp Citrus marmalade
2 Tbsp lime juice
2 c curry sauce
2 c steamed rice.

In a large skillet or wok fry the pepper , mushrooms, and cucumbers in the marmalade and lime juice over medium high heat.  Stir fry until the mushrooms have darkened in color, about 5 minutes.

Then add the chicken and curry sauce to the pan.  Stir until the vegetables and chicken are evenly coated, if you like things spicy you can add a jalapeno here.  If you do add the pepper then press it against the side of the pan to release it’s juices in the sauce.

Let the sauce simmer for 5 minutes on medium high heat, then serve it over the rice.

One thing with Stir-fry like this is that you can do many different things to it to fit your taste.  For instance you can  some bean sprouts if you like those.  Or try adding some sliced carrots or mini corn to the veggies.  My mother made this but forgot to add the cucumber so she just had raw cucumber on the side and really enjoyed it.

If you want to really make it a healthy chicken breast recipe then look for marmalade and curry sauce that has little or no sugar.  Also serve it over brown rice instead of white and that will make this recipe even healthier then it already is.  You could also reduce the amount of chicken slightly, or just use really small breast and add more veggies.

Whatever you choose to do just make sure you enjoy it no matter how healthy you make it if you don’t enjoy it, you won’t eat it.
