Healthy chicken breast recipes that anyone could love

Chicken is full of protein and other healthy essentials, plus it is low in cholesterol and fat so it is a very healthy option to choose.  It can actually compete with a salad if grilled or baked rather then fried.  I am now going to share with you a healthy chicken recipe that not only is healthy but with the plum dressing is absolutely scrumptious.  The aroma and flavor will be something to talk about for weeks to come.

4 skinless chicken breasts
2 c plums, cut into small pieces
½ brown sugar, packed
2 tsp lemon juice, fresh preferred
1 tsp cornstarch
1 tsp ginger
2 Tbsp soy sauce
1 Tbsp Plum jelly
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper

The dressing can be prepared a day or two early, to save time, but make sure you refrigerate it.  When cutting the plums you do need to discard of the pits, you won’t be needed them.  If you use canned or frozen they should have pits so you won’t need to worry about that extra step.  In a mixing bowl add the plums, cornstarch, jelly, and soy sauce together.  This mixture should be fairly moist and you can add a little water to it.  While stirring gradually add the brown sugar, then ginger and lemon juice.  Continue mixing until blended then add onion and garlic powder, and mix again.  The dressing is now ready to be refrigerated.

When ready get your dressing and dip your chicken in it until well coated.  Then organize your chicken in a 9×9 baking pan, and cook at 375 for 25-30 minutes.  About 10 minutes before it is finished you can pull it out and add a spoonful of the dressing on top of each chicken.  I then will heat up the remaining sauce on the stove top.

Garnish with dressing and a little parsley, goes well with baked potato and vegetable.  To keep it a really healthy chicken breast recipe use asparagus or broccoli.
