Low Carb Chicken Recipes

There are a lot of diets out there that promote low carb chicken recipes.  However, I have found that these recipes often lack flavor.  But I did find 2 low carb chicken recipes that are flavorful , so if you are on a low carb diet, or just want to eat healthier, try these.

Low-Carb Chicken with Sauce
1 lb boneless skinless chicken breasts, cut into bite size pieces
¼ c onions
2 cloves garlic, minced
6-8 oz chopped green chilies
¼ c cream
1/3 c shredded cheddar cheese

Heat about 1-2 Tbsp of oil in a large skillet.

Then add the chicken and season it with a little salt and pepper.  Sauté until starting to brown; add the onions about 2-3 minutes into cooking chicken.

Then add the garlic and cook for 1 minute.

Deglaze the pan with a little water if necessary.  Then add the chilies and cream.  Simmer until sauce has thickened and chicken is done.

Sprinkle cheese on top and serve.

This next low carb chicken recipes is one of my favorites.  Mostly because I really enjoy chicken cordon bleu.

Low Carb Chicken Cordon Bleu
4 boneless skinless chicken breasts
4 thin slices of ham
4 oz of bleu cheese, divided
1 Tbs butter, melted
1 large egg, beaten
¾ c Parmesan cheese

In between plastic wrap flatten the chicken to about 1/3” thick.  Then place a piece of ham in the center of breast and top it with ½ oz of bleu cheese.  Roll the chicken up and secure it with a toothpick.

In a small bowl mix the butter and egg together.  Then dip the chicken in the egg mix, roll it in parmesan cheese and place it in a lightly buttered pan.  Do this with the remaining 3 breast and then bake at 350 for 25-30 minutes.  Before serving top each breast with additional ½ oz of cheese and bake just until melted.  Serve and enjoy.
