This low cholesterol chicken breast recipes came from my mother. She got it from her doctor when she was required to go on a low cholesterol diet and it is just wonderful. What I particularly enjoy about this low cholesterol chicken breast recipe is that it’s not just a chicken breast recipe, it’s more like a chicken meal. All you need to do is prepare this and your done for dinner. Not only that but it taste great and it’s low in sodium as well as cholesterol.
Low-Cholesterol Chicken Meal
2 small chicken breast, boneless and skinless, cubed
1 small sweet potato
1 medium potato
¼ c milk
1 Tbs Olive Oil
2 garlic cloves, finely chopped
1 tsp minced ginger
½ small onion diced
½ c butternut squash, cubed
1 medium carrot, diced
¼ c water
1 chicken bouillon cube, low sodium if you can find it
2 tsp cornstarch
¼ c apple juice
1 large apple, diced
Place the potatoes and yams in a pot covered with water and bring to boil. Boil until tender, drain and mash with milk. Add salt to taste, salt substitute works great as well. You can also add 2-3 tablespoons of applesauce at this time for extra flavor. Set this aside.
In a large pan combine chicken, oil, garlic, onions, ginger and sauté for 3 minutes over medium high heat.
Next add the carrots, squash, bouillon cube and water to the pan. Cook until vegetables are tender, about 20 minutes.
In a separate container add the apple juice and cornstarch and mix well. Then add this to the chicken pan.
Add the apple and continue to sauté for about 5 minutes.
Pour the chicken mix into a baking dish, cover with your mashed potatoes and bake at 350 for about 20 minutes or just until brown.
