Recipes for Boneless Chicken

I love having recipes for boneless chicken breasts in my house.  They are inexpensive and can be cooked so many different ways.  So I want to share two recipes for boneless chicken with you, including a really easy chicken tetrazzini and  broccoli chicken.

Chicken Tetrazzini
2 boneless chicken breast
1 portabella mushroom, julienne cut
2 tablespoons olive oil
1 tablespoon garlic, chopped
1 tablespoon beef soup base
1 tablespoon chicken soup base
¼ cup raw baby spinach
½ cup heavy whipping cream
10 ounces penne pasta, cooked

Grill the chicken and when done slice it julienne style; set aside.

In a large pan sauté the mushroom just until soft to the touch, about 2 minutes.  The add a little salt and pepper to taste.  Add the garlic and the two soup bases.

Let it come to a very light boil, then turn heat to simmering and add the spinach; cook for 1-2 minutes, just until it wilts slightly.  Then add the chicken and cream and continue simmering for about 5 minutes.

Toss in the pasta and serve.  Serves 4

The second of the two recipes for boneless chicken is a delectable cheesy chicken broccoli that my mom threw together a lot when I was a kid.

Chicken and Broccoli
4 boneless chicken breasts
1 can broccoli and cheese soup
1 “can” of water, just fill up the soup can once you’ve emptied it
2 cups fresh broccoli, if my mom was in a hurry she used a bag of frozen
Oil

In a large skillet heat enough oil to coat the pan and then just a dab more, usually about 2 Tbsp.  Brown the chicken on each side in the oil.

While the chicken in browning combine the soup and water in a large bowl.  Once the chicken is brown pour the soup over the chicken and top with the broccoli.

Cover and let simmer for 15-20 minutes, until the broccoli is tender and the chicken is done.

This goes very well served over rice.
