Recipes for Chicken Breast
I wanted to share two recipes for chicken breast with you that are inspired by other countries. One inspired by Mexican food and the other from China. These recipes for chicken breast may not be authentic cuisine but they certainly taste good.
Cheesy Mexi-Chicken
4 Chicken breasts
16 oz chunky salsa
4 slices Swiss cheese
4 slices tomato
1 Tbsp butter
In a skillet melt the butter and then add the chicken. Cover the chicken with the salsa once it has browned. Then cover and simmer until the chicken is fully cooked. Then remove cover and top each breast with a slice of cheese and a slice of tomato, you can do more then one slice of cheese or tomato if you’d like. Then cover and remove from heat. Once the cheese has melted serve. This goes well with a rice dish or even chips and a salad.
The second recipes for chicken breast is the one inspired by China I is a very wonderful chicken lo mein, not as easy as the first recipe but very much worth the effort.
Chicken Lo Mein
3 boneless skinless chicken breasts
1 c carrots, julienne cut
½ lb snow peas
1½ c spaghetti, broken in half
Cornstarch
1 tsp sugar
2 tsp water
1 Tbsp soy sauce
1/3 c chicken broth
4 garlic cloves, finely chopped
2 tsp gingerroot, finely chopped
½ bean sprouts (optional)
First cut the chicken into thin short strips and set aside.
Fill a large saucepan with water and heat to boiling. Then add the carrots, snow peas and spaghetti. Boil until the spaghetti is al dente, usually about 5-7 minutes. Drain and rinse with cool water to keep the pasta from sticking.
While that is boiling mix 1-2 tsp cornstarch, the sugar and water in a bowl. Then add the soy sauce, broth, garlic, gingerroot and bean sprouts and mix.
Then in a sprayed nonstick skillet or wok stir fry the chicken until white, usually about 2-3 minutes. Add the veggies, pasta and broth mixture and continue to cook for 2-3 minutes until well heated.
