Simple Chicken Recipes For Two

Simple chicken recipes for two can be a challenge to find sometimes.  Most recipes our designed for families, which I now have, but I was once married and had that awful task of finding simple chicken recipes for two people rather then 4 or 6.

Chicken Cordon Blue

2 skinless boneless chicken breast
2 slices of Swiss cheese
2 slices of thin smoked ham
1½ Tbsp Flour
1 egg, beaten
½ c Italian bread crumbs
2 Tbsp Butter
¼ c chicken broth
½ whipping cream

In between plastic wrap pound the chicken breast to ¼” thick.  Salt and pepper both sides to taste then place 1 slice of cheese, then 1 slice of ham on the breast.  Roll up the breast and use a toothpick if needed.

Dredge the chicken in the flour and shake it to remove the excess flour.  Then dip it in the egg followed by the bread crumbs.  Put it in a small baking dish that has been sprayed with non-stick spray.  Then top each chicken breast with 1 Tbsp of butter.

Bake at 350 for 30-35 minutes.  While the chicken is baking combine the broth and cream in a small saucepan.   Leave uncovered and simmer on low until thickened.  Season with your favorites i.e. salt, pepper, garlic powder, parsley, etc.

To serve place chicken on platter and pour sauce over it.

Chicken Fettuccine
1 lb boneless, skinless chicken breast
¼ c butter
1 clove garlic, minced
2 Tbsp green onions, chopped
¼ c Parmesan cheese
½ c cream
½ Tbsp lemon juice

Cut your chicken into 2-inch cubes and sauté in a skillet with the butter.  When the chicken starts to brown add the onions and garlic.

Sauté for 2-3 minutes then add cheese and cream.  Cover and simmer over low heat until the sauce is thick and chicken is done.

Serve over fettuccine, that is sprinkled with the lemon juice.
