Simple Chicken Recipes

Both of these simple chicken recipes shouldn’t require more then 15 minutes prep time and your family will enjoy them.

The first of the two simple chicken recipes is an Italian chicken with a twist.

Italian Baked Chicken
4 chicken breasts
2 tsp salt
1/3 c Italian dressing
1 bulb of garlic
¾ Tbsp mustard powder
¾ Tbsp Honey

First start preheating your oven to 400.

Place the chicken in a casserole dish that you have a lid for.  Sprinkle the chicken with the salt and then pour the dressing over it.

Pull the cloves from the garlic bulb and arrange around the chicken, you can use less if your taste buds would prefer.

Sprinkle the mustard powder on the chicken and then top with drizzled honey.

Cover the dish and bake for about an hour.

This recipe goes well with anything but my favorite is to serve with Italian mashed potatoes (just add some Italian dressing to the potatoes when mashing) and peas.

The next simple chicken breast recipes I want to share is a really simple quesadilla.  They are very quick to make and my family will devour them.

Flour Tortillas
1 lb Boneless skinless chicken breasts
½ Salsa
1 can Cheese Soup

Cook the chicken, I prefer to boil it because it is soft and a lot easier to shred.  Once the chicken is cooked shred the meat in a bowl.  If you are in a hurry or the chicken will not shred you can cub it instead.

Add the salsa and soup to the chicken and stir.  Spoon some of the mix into a flour tortilla, I usually use about 1/4-1/3 cup but you can use more or less depending on preference.  Fold the tortillas over and place on pan.

Bake at 350 for 5-7 minutes, until inside is warmed.

To serve place on plate and top with your choice of refried beans, sour cream, avacado, lettuce, tomatoes, olives, or guacamole.  You could also serve this with a side of rice.
