Grilled Stuffed Chicken Breast Recipe

I have this stuffed chicken breast recipe that I love making.  I am a big fan of using the grill to cook dinner, mostly because it’s hard to go wrong with the grill, unless you burn it.  Well this stuffed chicken breast recipe is done on the grill!

Grilled Stuffed Chicken Breast
6 chicken breasts
½ lb Italian sausage
3 cloves garlic, minced
½ Tbsp Olive oil
4 strips hickory or maple flavored bacon, chopped
2 Tbsp butter
¼ lb fresh mushrooms, finely chopped
½ cup bread crumbs
1 tablespoon fresh parsley, minced
1/8 teaspoon each onion and garlic powder
¼ teaspoon paprika
1 cup sherry
6 bacon strips

In a large skillet sauté the sausage with the garlic and olive oil; when the sausage starts to color add 4 of the bacon strips and fry until bacon is crisp and sausage is brown.  Remove the meat as it is done.

Add the butter and mushrooms to the pan and sauté over medium heat.  Once the mushrooms are softening add the bread crumbs and parsley.  Then add the onion and garlic powder along with the paprika.  Salt and pepper to taste, and stir together well.

Pour the sherry in to moisten and remove from heat.  Add the sausage mix and stir.

At this point preheat your grill to 350.

Split the chicken and pound with a meat mallet, careful not to make the chicken too thin.  Spread some sausage mix onto each chicken breast and roll up.  Then wrap each chicken with a piece of bacon and fasten with a toothpick.

Spray chicken with olive oil and sprinkle with black pepper, garlic powder, salt and paprika.

Place the chicken on the opposite side of the burner that is on, but keep the temperature of the grill around 325-350.  Turn about every 7-10 minutes until done, normally 25-30 depend on size of breasts.

If the chicken appears to be drying then quickly baste with some olive oil.

This goes really well with a mushroom rice mix and a salad.
