Winter Grilled Chicken Breast Recipe
Just because it is winter does not mean you can’t grill. With this delicious grilled chicken breast recipe you won’t be able to wait until summer. So pull out the bbq grill and get it fired up.Sausage-Stuffed Grilled Chicken
1/2 lb Italian sausage
3 cloves fresh garlic, minced
1/2 Tbsp olive oil
4 bacon strips, chopped
2 Tbsp butter
1/4 lb fresh mushrooms, chopped
1/2 c bread crumbs
1 Tbsp parsley, fresh and minced
1/4 tsp paprika
1/8 tsp of Onion and garlic powder
1 c sherry
6 chicken breast split
6 bacon strips
salt and pepper to taste

Over medium heat saute the sausage with fresh garlic and olive oil. As the sausage begins to brown add the chopped bacon and fry until the sausage is brown and the bacon is crisp. Do not remove pan from heat, but remove the meat from the pan, leaving the fat.
Then add the mushrooms and butter to pan. Over medium heat saute the mushrooms until tender. Add the parsley and bread crumbs and mix. Cook for about 15 seconds and then add the remaining seasonings and salt and pepper to taste. Stir together while adding the sherry. Remove from heat and combine with the sausage mix.
At this point you will want to start preheating you grill to 350
Split the chicken breast down the center but leave them connected. Pound with mallet but be careful not to make them too thin or the stuffing will come out. Once the are flattened add an even amount of sausage stuffing to each breast and roll. Wrap with a slice of bacon and secure with toothpick.
For added flavor you can roll the chicken in a mix of garlic powder, Parmesan cheese, and parsley.
Cook on grill for about half an hour basting with olive oil whenever chicken appears dry.
This will go great with grilled corn on the cob or some veggie skewers.
